Since the last two posts were kulfis, I figured I'd go with the flow and add my chiku ice cream recipe.
1 bag frozen sliced chikus (found at Indian grocery stores like Patel Brothers, etc)
1 can evaporated milk
1/2 can sweetened condensed milk
1 container of Cool Whip
Blend all the ingredients (make sure there are no seeds left in the chikus!) and pour into a tray. Freeze about 8 hours and serve. :) You can also pour this into the little 4 oz. cups for individual servings.
Other ice cream recipes are pretty much the same, just switch out the fruit - you can make strawberry or mango or whatever you want. I've tried it with mango puree, which turned out pretty good except there were some ice flakes frozen in.
For kulfi, replace the chikus with 16 oz heavy whipping cream, add two slices of white bread, ground almonds and pistachios, a pinch of elaichi powder, and coconut powder (the coarse kind). Decorate the top with ground almonds and pistachios too. I tried adding green food coloring (the liquid drops) to make it like pista kulfi, but it seemed like that caused ice flakes to form.
