Ingredients:
1 small onion thinly sliced
2 or 3 medium potatoes
1 tablespoon imli/tamarind pulp
1 teaspoon ginger-garlic paste
pinch of turmeric powder/haldi
1/2 teaspoon of pisa garam masala
red pepper flakes ((to your taste))
salt to taste
Soak the imli in warm water to soften and set aside. Boil the potatoes until about half cooked. Peel the potatoes and cut into large cubes. Sautee the onions until light golden brown. Add the ginger-garlic paste, haldi, and garam masala. Smash and squeeze the imli in the water to get as much pulp/juice as you can and pour that into the pot along with about 1/2 cup of water, and cook for a couple minutes. Add the potatoes, red pepper flakes and salt and cook for a few minutes until the potatoes are cooked through and the water becomes a bit thick or slightly dried up. You can adjust the imli, red pepper flakes or salt to your taste.
I was thinking what if we left the potato skins on...i did that once with something and i really liked the flavor.
