Aash

I got this recipe from a friend recently. This is really easy and very hearty. You can add or subtract whatever veggies or grains you like. I gave measurements for dried herbs but fresh are fine too, just use double the amount if using fresh.

Ingredients:

1/2 lb ground beef
1 onion, chopped
About 1 cup chopped carrots
4 garlic cloves minced
1 tbsp garlic powder
1 tbsp parsley flakes
1 tsp dried oregano
1/2 tsp dried dill
1 6 Oz. Can of tomato paste
5 cups of water or chicken broth
1 cup orzo or any small pasta or grain of choice
Salt, pepper, crushed red pepper to taste
Mix the ground beef with salt, pepper, and 1 tsp of garlic powder. Form into tiny meatballs, about  the size of garbanzo beans. (yes, it will be tedious and annoying) fry the meatballs in a couple tbsp of olive oil until brown on all side. Remove from oil and set aside.

Drain off some of the oil from the pot, and sauté onions and carrots until the onions are translucent. Add minced garlic and stir for a minute. Add parsley flakes, oregano, crushed red pepper, salt, pepper, garlic powder and tomato paste and stir. Add water or chicken broth and bring to a boil. Let simmer for ten minutes, then add pasta and meatballs and simmer until pasta is cooked through. Add dill at the end.
